1 kg Australian rainforest honey

1 week secondary fermentation
Temperatures:
Yeast pitched 1 day after wort boil - temp ~18 C
9-22 C during primary fermentation, heating pad used for a
couple of nights as generally quite cold.
10-25 C secondary fermentation, averaging in the high teens.

7.5%
Notes:
A first attempt at a honey wheat beer. Yeast was used after a yeast starter for ~1 day (had been in the fridge for a few months), but appeared to be active.
After 1 week fermentation, gravity was 1030 and still tasted very sweet so left with heater pad for a further week.
After 2nd week of fermentation the gravity had dropped to 1012 and is deceptively sweet. Brew was moved to racking barrel for 1 week.
After racking the sweetness had disappeared and the brew was left with strong wheat beer taste and a honey-like after taste.
Very happy with this beer - it's got the wheat character as well as a recognisable honey-like after taste. However, drink with care - it's STRONG! Will hopefully make again, with a little less sugar in order to bring it down to 5-6% and take the edge off.

Notes:
A repeat of the original but toned down slightly. Use a very similar hop boil but less malt and less honey to hopefully reduce the final ABV. Bulk primed, 140 g. Strong banana smell during bottling.
This beer was a complete success. The banana flavours have come through from the yeast, there's a hint of the wheat and a nice honey-like flavour. Excellent.
